Say hello to your new morning digestif: The Tamarind Tonic. A sweet and sour tonic inspired by one of Indonesia’s most remedial tonics: Gula Asem, which in literal words translates to sweet tamarind. Known as the ‘slimming’ tonic in Indonesia, this easy to brew recipe will nourish you with its colon-cleansing and detoxifying benefits. What You’ll Need
100 grams dried tamarind pods
2 quarts (2 liters) drinking water
1 cup coconut sugar (add more if needed)
20 ml lime
How To Make It
Bring half the water (about a quart) to a boil in a large pot over high heat with the tamarind pods and the sugar.
While the water is boiling it will begin to soften the tamarind, allowing it to infuse the flavouring of the water.
After the water comes to a rolling boil, remove it from the heat. Let the tamarind and the sugar absorb into the water.
The water will have cooled down. Run the liquid through a strainer to remove all the seeds and strings of the tamarind.
Pour your delicious Gula Asem into a pitcher, add your lime, and refrigerate until cold. Serve over ice, et voila.
